I basically made this list to highlight the fact that RedLynx included analogue trigger support in the Switch port via the GameCube adaptor. It's a feature that is widely unpublicised, but they deserve the world's respect for finding a workaround.
Everyone who has ever shown an interest in the Dreamcast Fishing Controller knows that it allows rudimentary motion controls in SoulCalibur.
Less well known is the fact that Soul Blade supports the neGcon, and you can map controls to the twisting motion.
The Dreamcast Fishing Controller also works on Crazy Taxi, where acceleration is tied to how quickly you reel. A death sentence.
Syndicate Wars also supports the neGcon, with the twisting allowing you to rotate the camera. Due to the complexity of the PlayStation port's controls, it is basically unplayable with a neGcon, so its functionality here is especially strange.
The PlayStation port of Quake II allows players to control the game with the d-pad and a PlayStation mouse, and it improves the game quite dramatically.
For the game's Japanese release, Hori produced a limited edition katana controller that tied attacks to swinging the sword, while all other actions were performed via Dualshock-style buttons that they squeezed onto the hilt.
The ability to engineer somewhat modern dual-analogue controls via two N64 controllers is fairly well known, especially given its utility in the Switch version

I feel there is a shrinking awareness of Taito's DS Paddle controller that plugged into the GBA slot.
Codemasters' combination of the eccentric "J-Cart" (a Mega Drive cartridge with two additional controller slots built into it) and the "Split Pad" functionality, allowing two players to each take a side of a shared controller, allowed them to boast about the potential for 8-player gameplay.
Not only did the NES conversion of Smash TV allow a player to hold two controllers vertically to simulate dual-stick controls on the d-pads, but with the use of a NES Four Score and four controllers, two people could share that experience.
Seemingly as an in-joke on the programmers' behalf, the Dreamcast port of Mr Driller supports practically every controller on the system, including the keyboard, lightgun and Samba de Amigo maracas.
Keita Takahashi's 16-button comedy game that has only ever been playable at touring events because it's completely unmarketable as a product.
The PS2 home version of this arcade dancing game came bundled with Sega Activator-style motion sensors that had to be carefully arranged in an arch in front of each player

The Dreamcast fishing rod could almost have it's own entire section as I'm sure there are dozens of games where it strangely works.
The one that comes to my mind over Soul Calibur is Crazy Taxi where reeling = accelerating.

speaking of the fishing rod: mr driller on dreamcast, which supports the fishing rod, light gun, keyboard, microphone, maracas, dance mats, steering wheel, mouse, and pop'n controller

I'll add Mr Driller. Taste the Pain had a silly controller, but it didn't have any unique functionality. I considered Resi 4 for the chainsaw controller, but that's borderline.
