While Factorio didn't really click with me, Satisfactory is one of the most fun timesinks I've ever had!
It's gorgeous, plays very well and easily, you can unleash your creativity however you want (all hail spaghetti!) and the sub-objectives keeps you occupied enough to pursue that big project at the end! It's perfect for engineers, like me.
