100% the most overhyped game I've ever played, nothing actually met my expectations, the story and the ost were close, but the way people talk about this game I expected A LOT more.
I'm quite impressed by how much stuff this game has to offer for a ps1 game, I completely understand how this game was revolutionary, but I still wasn't able to enjoy the game.
The story until the halfway point (end of Disc 1) was extremely mediocre, but thankfully it gets really good after, the OST as well. The animations, cutscenes and VFXs were the best part of this game, how they were able to do them in ps1 game is beyond me.
Now, the game has aged like milk, the menus maybe were good at the time but are awful to go through, the combat system that punishes you for not playing fast is annoying as hell, the Gold Saucer is the worst part of any game I've have ever played, every mini game is terrible to play, specially the snowboard, the random encounters are way too frequent and the characters are extremely hit or miss, none are really special. Also, this is a nitpick on the PS4 version, but the HD 3D character look really bad and out of place on the overworld, the original is way pretier.
Overall, the game gets carried by the story and the ost for me, I'm completely disappointed.

High enemy encounter rates were the norm back then so to me it sounds like you are not used to oldschool JRPGs, I've been playing FFVII for the first time and I can't really find it that annoying, in fact I can finally see why everyone and their mother praises it so much.
Shame you didn't enjoy it that much. I do recommend playing more PS1 and SNES-era RPGs and then revisiting FF7, as familiarity with the RPG landscape at the time this game dropped might help you appreciate it more. I know that sounds pushy, but I'm being sincere. FF7 was fairly streamlined and quality-of-life-conscious compared to other RPGs of the time!
Also, if you dislike the Active Time Battle/having to play fast in the combat system, there is an option to make it truly turn-based in the System menu. An NPC tells you near the start of the game lol.

then run from the ones you dont want to fight. i probably ran from half the encounters in the game both because i didn't feel like fighting them all and i didn't want the game to get too easy
only thing i agree with here is the models on the remasters - i dunno why devs always feels the need to upscale character models for old games. especially when the backgrounds are prerendered. it just looks jarring and dumb. keep the jagged polygons so the characters still look like they fit in the world
