I get what you mean. Those exact bosses (ape, DoH) break the mold because they require you to dodge instead of deflecting, which is the polar opposite of what you've been taught all game. I always get sweaty hands whenever I fight them. But once you get used to them and exploit their weaknesses( fire chrackers and divine confetti for ape/ finger with ring for DoH) then they aren't too bad. Sekiro just is that way where it is ultra draining till you find optimal strategies.
