You can Phoenix Down the final boss.
One segment of Neo Exdeath is vulnerable to death effects, another is vulnerable to specifically Magic Lamp Odin. All of them can be taken out at once with Level 5 Death and some setup
Malpercio can have its resistance to instadeath removed by the Tower arcana just like everyone else.

you can 1-shot almost every boss in Dark Souls, including the final boss
I'm torn on if doing a bunch of damage in Dark Souls should count, but Ninja Gaiden feels okay to me. I need to think about it.
