Canonical stuff~
Information for some games is incomplete. A work in progress.
Specificity of terms used is dependent on what I have managed to confirm the accuracy of myself.

"Non-binary" is used to refer to anyone who is neither strictly female, nor strictly male in gender, even if there is a more specific term that is applicable.
I use "m-spec" here as an umbrella term to refer to a romantic and/or sexual orientation of attraction to multiple genders.

I have some as-of-yet unreleased games at the bottom of the list.

Suggestions are more than welcome. : )

I'm also maintaining a list specific to non-binary representation and options, for anyone who's craving that.

Features multiple bisexual and gay characters.
Features mlm romance.
The player character can be non-binary.
The player character's voice, body, and pronouns can be selected independently of each other.
The player character can pursue non-heterosexual romance.
The female protagonist can pursue romance with a female love interest.
Features a transfem character, Arashi, who may be non-binary or a trans woman. Arashi refers to herself with a typically feminine first person pronoun in the original Japanese, and is referred to by other characters with typically feminine/female gendered terms.
Features an m-spec character and a trans character. The protagonist is also of ambiguous gender.
The protagonist can be non-binary. The player can also select a sexual orientation (straight, gay, bi, or asexual) for the protagonist.
All main characters are m-spec. Both the male and female protagonists can romance any of the same love interests, and pursue non-heterosexual romance.
Features mlm and wlw characters.
The protagonist can be non-binary, male, or female, and can pursue romance with either of the male love interests regardless of the gender identity selected for the protagonist.

Regardless of the pronouns selected for the player character, the same love interest can be romanced.

A couple to add perhaps: OneShot also has a main character of non-specific gender similar to Undertale/Deltarune, and the player character in Outer Wilds is agender and only uses they/them pronouns (as is their entire species). Hollow Knight also features LGBT romance as well as the player being agender (Nailsmith & Sheo are shown, Grey Mourner & Tratior's Child).

Nooo, what!? Definitely adding that bit about Outer Wilds to my NB list too (and really must get around to playing it).
