Canonical stuff~
Information for some games is incomplete. A work in progress.
Specificity of terms used is dependent on what I have managed to confirm the accuracy of myself.

"Non-binary" is used to refer to anyone who is neither strictly female, nor strictly male in gender, even if there is a more specific term that is applicable.
I use "m-spec" here as an umbrella term to refer to a romantic and/or sexual orientation of attraction to multiple genders.

I have some as-of-yet unreleased games at the bottom of the list.

Suggestions are more than welcome. : )

I'm also maintaining a list specific to non-binary representation and options, for anyone who's craving that.

The player can play as non-binary. The protagonist's presentation and gender/pronouns can be chosen independently of each other.
The love interests are romanceable regardless of both.
A romance story featuring wlw characters.
Features a bi character.
NSFW game in which the player can choose pronouns and genitalia separately for the protagonist.
Features non-binary characters. One of the characters is a trans woman.
Depicts wlw romance.
The protagonist can be non-binary. The player can also select a sexual orientation (straight, gay, bi, or asexual) for the protagonist.
The protagonist is non-binary, and the player can choose the protagonist's presentation from an array of traits, which can be changed throughout the game.
Features romanceable non-binary character, Zaheen.
The player character can be non-binary, male, or female, and pursue romance with the male love interests regardless of the pronouns selected for the player character.

The player can select their pronouns, including they/them as an option. The player character/player can romance LIs regardless of this selection. There is also a non-binary character.
Features two romanceable bi characters.

The player character can be non-binary, male, or female, and becomes romantically involved with a male love interest.
Depicts gay romance.

The protagonist can be non-binary. Romance option are not restricted by the gender identity selected for the protagonist.
Features multiple mlm characters, including the main character, who becomes romantically engaged with male love interests.
The player can select pronouns (including they/them) as well as the romantic orientation of the protagonist.
The player character can be non-binary, and the player character's gender identity can be changed at any time. All love interests can be romanced regardless of gender and sex.
Also features a non-binary character, Quinn, and a gay relationship.

The player can select appearance and pronouns (including they/them) for the protagonist independently of each other. Any of the love interests can be pursued regardless of these selections. There are three love interests; one non-binary, one female, and one male.

The female protagonist can romance a female love interest (as well as male love interests).
Features non-heteroromantic characters.
The female protagonist can pursue romance with a female love interest.
Features a non-binary character, Jiwon.
Features three female love interests that the female main character can romance.

All featured (romanceable) characters are LGBTQ+ in some manner, including bisexual, pansexual, lesbian, gender-fluid, agender, and more.
The player can play as their desired gender, as well as being trans or cisgender.

The player can select pronoun for the protagonist from they, she, and he. Any love interest can be romanced regardless of this selection.
The main character is asexual and non-binary.

Features a genderless character, Envirio (who is misgendered by other characters, but appears unperturbed by this).

The player can play as non-binary, male, or female, and can romance the male love interests regardless of this selection.

Features a transfem character, Arashi, who may be non-binary or a trans woman. Arashi refers to herself with a typically feminine first person pronoun in the original Japanese, and is referred to by other characters with typically feminine/female gendered terms.
The male protagonist can romance either a non-binary person, a male, or a female.

A couple to add perhaps: OneShot also has a main character of non-specific gender similar to Undertale/Deltarune, and the player character in Outer Wilds is agender and only uses they/them pronouns (as is their entire species). Hollow Knight also features LGBT romance as well as the player being agender (Nailsmith & Sheo are shown, Grey Mourner & Tratior's Child).

Nooo, what!? Definitely adding that bit about Outer Wilds to my NB list too (and really must get around to playing it).
