Ando's love for virtual orchestras began here. After struggling with the orchestral sound direction of Melee, under Sakai's guidance, somehow he pulled through with the most convincing fake orchestral in the entire game. You can tell he likes it too, because it shows up in Star Allies as a 100% Menu theme.
Introduces a new intro section used by some other versions. Leads into Kirby's Triumphant Return more directly than in Crystal Field

Arpeggiated main melody over a slower countermelody, even more background arpeggios, liberal use of cutoff filters, slight changes including a modulation to F that hints at a resolution in D before faking out back to C

Drag Race

Similar in style to Battlefield from Super Smash Bros. Melee.
Somewhat in Ando style, chooses to resolve less often, staying on dominant chords at the ends of sections
A lot of 3+3+2 rhythms moving in seconds, especially near the end of the loop.

Kirby's Air Grind

Rowdy Charge Tank on the GBA's sound hardware! It's shorter and simpler, but it still gets the idea across surprisingly well. I wonder if this says anything about the samples chosen (likely mainly by Ishikawa) for the GBA/DS games?

I think this one is a Sakai, but we don't have proof. A relatively early example of transforming the Green Greens melody like a motif around a whole new composition! The B section has some really nice voicings

Inserts the B section really jarringly at the loop point of Butter Building as an orchestral break in the middle of the rest of the guitar and synth-heavy arrangement.

The Legendary Air Ride Machine

A much more tasteful insertion of the A section of Green Greens, partly because of how their melodies share rhythmic ideas, and partly how smoothly it transitions into Gourmet Race.
It's all rendered on trumpets and brass! Really makes it sound like a heroic anthem or fanfare, doesn't it?
Heavy Lobster

I think this theme makes a lot more sense from the point of view of Meta Knight's crew. Hearts racing, the entire ship at stake, the Heavy Lobster deployed against their own ship in one desperate shot against the demon whose theme looms ominously in the distance.

Ishikawa probably didn't think like that about this theme (if it was him, anyway, which I believe it was), but it's a fun way to explore the question of "why is Green Greens' melody here?"
Green Greens (Whispy's Forest)

A series-defining moment. The live melodica, keyboard flute and bass guitar go on to become staples of the soundtracks one way or another, especially finding a place to call home in various spinoffs like Dedede's Drum Dash and remix albums like The Sound of Kirby Café 2.

It's a fairly intricate arrangement, going through two renditions of the original two-section loop before tying Triumphant Return in for the first time in nine years.

If you think about it, it's actually pretty similar to the Melee version in form, except for the opening. This one might be my favorite.
Rainbow Riches

This one's interesting. The A section's in 3/4 and scored like a piece of classical music or national anthem, and then the B section's a lighter shade of orchestral back in 4/4.

Eerie Island

It's the Melee opening! Almost! It's written like real march, down to the slightly loose unquantized time feel.
It seems based on the Melee arrangement for the most part, although it loops after the first A section.

Down to One

Starting with Triumphant Return! It's kind of like Kirby's very own Love Theme. This might be the most straight-up reharmonization the theme has seen up to this point; the A section alone feels like how a jazz pianist might interpret the melody... or maybe I'm just a weirdly Sakai-influenced pianist.
