There's a ton of Ace Attorney parodies out there, some examples being Socrates Jones and Aviary Attorney.

this isn't really a game but I think WinBlows 98 deserves a shoutout. I think it's from the people that made pyst too
Buta-san Quest is a parody of JRPGs from the 80's, but mostly Dragon Quest (obviously)
Super Amazing Wagon Adventure is absolutely one. Also 'Shadow of Loot Box'.

@Jamesbuc - Several places refer to it as a parody of Final Fight (Wikipedia, Final Fight fandom). Iv'e not actually played it.
