World of Warcraft has a large selection of mammoths and elephant-adjacent fantasy creatures controllable as mounts. If you want to get specific I believe the first one appeared in the Wrath of the Lich King expansion but they've appeared several times since then.

You can transform into a elephant in some of the Shantae games. Available in 1, Risky's Revenge, and 1/2 Genie Hero

The Shin Megami Tensei series counts I think. There are at least a couple elephant-demons.

@electrode Correct, you can recruit them onto your team. The Pokemon comparison is solid, I realize that they wouldn't count in this case then.
