I like the end credits in New Super Mario Bros. Wii, where you can fight over collecting the most coins by jumping under blocks, each block representing a letter of the names of the developers.
Undertale, Smash 4, and Smash Ultimate also do this. Not counting Brawl because while it has the same minigame as Melee, you shoot the names of characters and items instead of the actual names of people who worked on the game.

In Rayman Legends, the letters of the credits are encased in ice that you can smash up for lums.
In Tatsunoko vs. Capcom, you take control of Doronjo's gang on a 3-seat bike and can jump to collect the letters of the credits. There's an entire game mode that can only be unlocked by grabbing all the gold letters in one go.
