MediEvil! One of my favourite games of that console on style and humor alone, it may have some gameplay shortcomings, but it still has some fun elements! If not, I heard any of the Residen Evil games are amazing, specially the first 2 (I still gotta beat them, tho)

The Misadventures of Tron Bonne: a prequel to Mega Man Legends that's pure charm! It mixes a bunch of gameplay styles and minigames and has some of the most endearing and charismatic characters ever to grace the PS1! You play as Tron Bonne, a "villain" from MML, and have to do normal villain stuff, like robbing banks and beating the crap of the police, all the while managing your little army of 40 minions (called Servbots), each with their own personality. It's super funny and, imho, even better than MML (but maybe not MML2, haven't played this one).

G-Darius: one of the coolest shmups ever. Beautiful polygonal graphics that are peak 90s and a bunch of creative mechanics like the ability to capture minibosses to fight on your side.

Mr. Driller: a great arcade port of one of the best arcade games from the late 90s.
