Musashi: Samurai Legend, sequel to Brave Fencer Musashi on the PS1. This is more of an action RPG though.

It's missing Mortal Kombat: Shaolin Monks
I recommend steering clear of Way of The Samurai. The first game at least is extremely basic, has combat that can be really frustrating since every computer knows tricks that you can't even learn if you tried because of the move learning system, its extremely limited in what you can actually do and feels so small. No idea about 2 and 3 from my memory is a much better game bogged down with menial fetch quests being required dozens of times over to advance certain plot lines.

I haven't played it myself, but I've heard that the Dreamcast version of Maken Shao, Maken X, plays a lot better. Not sure if you'd be interested in trying that, but the option is there lol.
