First thought from me was 'Lost Odyssey', and sure enough there it is.
The Longest Journey, Gabriel Knight 2, Rule of Rose, Fallout New Vegas, Eternal Darkness, Disco Elysium, and Cryostasis.
Metal Gear Solid 2? It recaps the story of the previous game in the form of a book
Does Minecraft count? I think a player has to make them and write in them, so it's a bit different.
The Nameless Mod has a whole fanfic added as an in-game book lol
Homebody has Dracula, Frankenstein another one I forgot and an entire original book inside of it
