hard to come up with examples that don't involve just reciting the wikipedia page for hd remasters but ng sigma probably qualifies? maybe operation winback too or even bangai-o if you wanna stretch.
Thought over this a bit more over lunch and found more examples (not sure if they all necessarily apply but I'll give it a shot):

I also don't know how Twilight Princess would apply to this, as it was almost immediately ported to the Wii and then got an HD remaster for the Wii U.
I got a little tired of looking through the Remaster & Expanded Game categories on Backloggd but there are definitely a ton more there that would fit this list.

I feel there's a bunch going from PS1/N64 to Dreamcast/PS2, I know Rayman 2 got a bunch of different versions.

Final Fantasy Origins
I guess nobody cares to discuss the actual nature of remastering/remaking but at the end of the day it seems to be how many excuses you can make to understand how good or bad a re-something is. Like, Final Fantasy Origins actually makes changes to the games, some changes that are actually really welcome in sacrifice of certain aesthetics, spells, rebalancing, difficulties, which translates to a pacing change, you name it. Could I do the same with something like TLOU Part 1 apart from le graphics and the possibility of some stuff changed?

i kinda don't think the super famicom dq3 belongs here, because it's considerably improved in so many ways and it's so fantastic that i consider it one of the best dragon quests and certainly (imo) the definitive way to play that game, pegasus's until the "hd-2d" version is out

kyuuyaku megami tensei should be considered a proper remake, too, while the vast majority of these are direct ports with light "remastering"

i guess i was getting stuck on the "absolutely shameful" bit, because i do think there are at least of handful of remakes and odd ports which justify their existence. i just think the list seems a little mixed up in its intent. sorry!

Metal Max Returns definitely counts, being a SNES remake of a NES game. Would Wario Land 2 count, though?
two more old ones that just occurred to me: fire emblem mystery of the emblem on snes (the first half of which remakes shadow dragon & the blade of light from nes) and snatcher on sega cd and onward (which remakes the pc-88/msx2 versions as far as I'm aware)
I know the line was a joke but I always want to vent about something because its frustrating to me how much I really want to not be pissed about remasters/remakes and how hard is to pinpoint if theyre exactly good or bad
