Not including hardcore stealth games (Metal Gear Solid, Dishonored, Assassin's Creed, etc) or games that utilize stealth as a core mechanic (Deus Ex, Sly Cooper, Beyond Good & Evil, etc) or as an optional core strategy (modern Tomb Raider games, Wolfenstein: The New Order, etc). There's also a case to put fire emblem fates conquest on this list. In Chapter 9 there's a character that's been taken prisoner in a fort that Corrin's army is trying to rescue, so on the left side of the map is a traditional fire emblem level but on the right side is the character that's been taken prisoner, who has to stealth around guards to meet up with Corrin's army on the left side of the map, or stealth around them long enough for Corrin's army to reach her and kill the guards.
The stealth mechanics of it are identical to the other fire emblem games on this list, and the character will be killed by the guards if you aren't actively stealthing around them, but the entire level isn't dedicated to it, since you're also doing traditional fire emblem gameplay in the left side of the level, so it's up to you if you wanna count it or not.

@Ninjabunny: I'll accept Fire Emblem Fates: Conquest as an example for the list since you have to resort to stealth mechanics to save that character and I've already included a couple of examples where optional sidequests are the only parts with forced stealth sections (but since you can't complete the sidequests without getting through a forced stealth section, it essentially makes it "mandatory" for full completion).

nevermind ive been informed that gollum is actually supposed to be partly stealth. I couldnt tell. My new pick is splat 2 octo expansion... theres a few levels where you dont have weapons and youre required to stealth for a bit, i believe
The Dragon God boss fight in Demon Souls could also techinically count as stealth, since if he sees you you are basically dead (if Demon Souls is already here my bad, I just didn't see it XD)

I remember as a kid when I was playing Harry Potter and the Chamber of Secrets on Xbox, I was having such a hard time trying to grab that book from that shop. Even when I walked really slowly and quietly to grab it, the shop owner always caught me and kicked me out of his store and I have to get the book all over again. So frustrating XD Haven't played it in a while, so I wonder if getting the book is a lot easier than what I remembered.
Just finished Humanity and I wasn't expecting a couple of all-out stealth missions plonked in the middle of the story levels
